RECIPE FARINATA WITH LEMON AND CURCUMA
The "farinata" (meaning "based on flour") is a Ligurian speciality usually cooked over a wood fire and made with chickpea flour, water, olive oil and salt. At Nice and on the Côte d'Azur it is known as "Socca" and in Toscany as "Cecina". It looks a bit like a big chickpea pancake. According to the legend it dates back to 1284, when Genova was victorious over Pisa at the Battle of Meloria: the Genovese called it "Pisan gold". In this recipe, the farinata is cooked in an electric oven at home, with an addition of curcuma powder, lemon juice, powdered rosemary, various seeds and small pieces of dehydrated olives and tomatoes... which gives an original spicy/tangy flavour but its authentic, awesome taste and its crispy outside / soft inside remain present, and its golden colour is even enhanced by the curcuma making it really shiny and appetising.
