RECIPE PUMPKIN FOCACCIA
This Italian flatbread is soft and bursting with conforting flavors thanks to the savory pumkins, fragrant herbs and warming spices. "Focaccia" from latin "panis focacius" means a flat bread cooked on an open fire or on cinders. its origin goes back to Genova, in the 1500s, at Rome it is known as "pizza bianca" and in France it can be assimilated with the "fougasse" of provençal origin. In this vegan and gluten free recipe, the pumpkin topping add a little autunnal and warming touch. It is always a success served warm as an aperitif; as a savoury energy-recovering snack or as a tasty side for soup and salad to replace bread. If you don't want to add spices, feel free to do without, maybe by adding more herbs and pepper. Pumpkin can be replaced with olives, dried tomatoes, peppers... or the focaccia can be plain, without any additions at all!
